Mung beans have a slightly sweet taste and a short soaking time of only 1-2 hours. Their nutty-mild taste makes them versatile. For salads, stews, soups, wok dishes and as a side dish.
Wash the beans and soak in plenty of cold water for 1-2 hours. Then drain the water and rinse the beans. Boil 1 cup of mung beans with about 3 cups of fresh water once and then simmer gently for about 30 minutes at low temperature with the lid closed. Only add salt after cooking.
